Toor Dal - 2 cups
Tomato - 1
Tamarind - Small lime sized ball
Sambhar Powder - 2 tsp
Curry leaves -few
Coriander leaves - few
Mustard seeds - for seasoning
Oil - 1 tsp
Red chilies -4
Vegetable (your choice) - 1 cup
Red Onion - 1 large
Asafetida - a pinch
Salt to taste
Preparation:
Cook toor dal with 4 cups of water. Mash it a little. Soak tamarind in water and puree it. Heat a heavy vessel. Add oil and season mustard seeds, chilies, curry and coriander leaves and asafetida and onions. Saute for a while. Add the cut vegetables. Add the tamarind puree. After a while add diced tomatoes, salt, and sambhar powder. Finally add the mashed dal. Cook till the vegetables become tender. Serve hot with rice/idlis/dosas. If you want the seasoning to stay fresh, reserve the seasoning to the end and do the other processes as before.
