Ingredients:
Carrot - 1 kg
Milk - 3 cups
Sugar - 1 cup
Ghee - 1/4 cup
Cashew nuts - 6
Cardamom powder - 1tsp
Raisins - 2 tbs
Preparation:
Carrot - 1 kg
Milk - 3 cups

Preparation:
Peel and grate the carrot. Heat one spoon of ghee in a heavy bottom pan. Fry the cashews and raisins. Keep aside. Add the grated carrot with remaining ghee in the same pan and fry for 10 minutes on low flame. Add milk and stir, till the milk is absorbed. Add sugar with cardamom powder and keep stirring for 10 more minutes. Garnish with fried cashews and raisins. Serve hot or cold.
